Botanical
The coconut is the fruit of the coconut palm, Cocos nucifera, a member of the palm family, Arecaceae. The mature fruit can reach up to 30 centimeters in diameter. It has a smooth, light green exterior when unripe, turning brown when ripe. Beneath this is a thick, tough, brown layer of woody fibers, characteristic of the fruit. The whitish inner layer is edible. It is grated and then dried to extract oil.
Manufacturing

The dried and grated coconut flesh is cold-pressed using a screw press, without the use of any solvents or chemicals. The oil is then filtered through blotting paper. Deodorization is achieved mechanically using steam (steam injection under vacuum, between 200 and 210°C). The oil is then stored away from light and heat.
